This is a curried butternut squash soup that I can't rave about enough. It is so easy to make, it is quite minimalistic in ingredients, and it really gives you all of the fall warmth you need in a bowl. The soup is vegan and gluten-free, but feel free to add any protein of your choice! It is also very healthy and extremely nutritious. There are many ways you can create variety with this dish. I decided to keep it simple and only used roasted garlic and curry powder, but if you want to add any herbs to make it more earthy, then it will complement the dish just as well! I decided to add the curry powder at the very end instead of cooking it in because the raw powder offered a more pungent taste that didn't get overpowered by the butternut squash and garlic.
