Homemade Masala Chai


Homemade chai might be a quarantine savior for everyone - it provides a good reason to get up in the morning, it wakes you up with a blanket of beautiful spices, and it gives you a strong jolt of caffeine required to start your day. Not to mention, dipping some Parle-G biscuits in just creates this level of nostalgia that brings us out of 2020 and into the past.




The secret to brewing chai is patience. You really want to make sure you give that pot of water and spices the time to infuse all the flavors, so the longer you wait the better. You can easily get a beautiful pot of chai within 10 minutes of boiling all the spices and tea together, but 15-20 minutes really gives you that perfect marriage.



The second thing to note is that you can add or remove any spices that you desire. If you think cloves are too strong for the morning, take them out. If you prefer black peppercorns, add them in. I've even substituted lemongrass for the mint leaves - and it is so different but equally delicious.
